Connie’s Rice Cake

tteokHere is the recipe for Connie’s delicious rice cake that we had during APC a few weeks ago. If you happen to make a batch please comment on this post and post some pictures of your batch in the reply! Maybe we can have a rice cake off in the future.

Rice cake

1.5 cups of sugar
1 stick of butter
3 eggs
2.5 cups of 2% milk
1 table spoon of baking powder
1 box of sweet rice flour
1 can of sweetened red beans

Heat oven to 375.

Cream the sugar and butter. When sugar and butter is mixed well, add the eggs to the mixture one egg at a time. Add the milk and mix well. Add the dry ingredients to the mixture.

In a cake pan, pour the cake batter and spoon the red bean paste on top. Because the bean paste is heavy, it will slowly sink to the bottom while cooking.

Place the cake pan in the oven and bake for 40 minutes or until golden brown.

Cool and cut to desired sizes.

* I have used muffin pans and that also works.

these little nuggets of sweet chewy goodness were amazing~ can’t wait to try it at home! though i’m sure they won’t taste nearly as good as the ones connie made =) and YES we totally should have a rice cake-off! we should have a secret ingredient like they do on iron chef.

can i nominate myself as judge?

I’d be careful. you can taste one and then start eating like a monster and eat the whole plate!!! they are sooo scrumptous

kevin – red bean?? the secret ingredient is supposed to be something you typically wouldn’t use in the recipe..it’s like having a cookie bake-off and using chocolate chips as the secret ingredient =P

how about…peanut butter? or nutella??
